Hope all is well in France, M.  C and I had a chance to talk last week with Jeff about possibilities and I wanted to combine our thoughts onto one page to track our development. C, you’ll see some thoughts here too that M and I have discussed before.  You should be able to tap on pictures to zoom in.

On 4/12 there was an* idea to take this back table and re-install it at the front. We measured it out (~126”x37”) and found it fits almost perfectly in the front space—here’s a picture of the table in question.







Here’s a sketch of how that might look. C showed me where the tape measure was, so I took the liberty of extrapolating out the counter space and the service channel. I allocated 45” of width for our service channel (similar to the existing service channel at the back bar) and 25” of width for the back counter (which is slightly smaller than the existing back bar)







Here’s another sketch of what that could look like (please note  that there would actually be no room to do a curved counter, so we might relagate thatt space to  a plant or trash bin instead?)





Also playing with the idea of a PPE Screen, there’s enough space on the counter to input lighting if we wanted to, but i’m also excited to see how the light in the room plays with a more south facing POS.


In relation to the service counter, I measured out our entire service area and found the following:



we’ll need about 97” inches of width  on our table to fit a POS , drink staging, and matcha stations. The rest can be EXPO, which is great because people love taking pictures of their drinks! You’ll notice too, that we still have about 24” to dedicate a steam wand if that’s something we want to install on the table’ surface (at a later phase of course)
