tea
tea is a spectrum, here is how it is made, via wikipedia:
what is white tea, generally white tea is ‘young’ or ‘minimally processed’ leaves of the camellia sinensis plant.
what is yellow tea, lightly oxidized tea, aka huángchá. similar process to green tea, except the leaves are ‘sweltered’—lightly heated in a closed container.
what is oolong tea, semi oxidized tea produced by allowing the leaves to wither in the strong sun.
why oxidize tea, to affect its flavor, color, and aroma.
what is black/red tea, aka hong cha, black tea is generaly more oxidized than oolong tea.
what is puerh tea, tea subjected to fermentation through ‘wet piling’ or other similar methods. there is ‘raw’ puerh which is produced through a lengthy traditional process, and there is ‘ripe’ puerh, which uses modern methods to accelerate the fermentation. puerh can be aged at home in non-airtight containers.
what is matcha, finely ground green tea specifically from shade-grown tea leaves. shade growing inhibits photosynthesis (causing it to develop its umami flavor) and increases chlorophyl concentration (causing it to develop its rich green color)
what is usacha, usacha is the traditional method of preparing matcha with water
how much caffein is in tea, it varies: generally in one 8oz serving: black/red, 40-70mg; oolong, 30-50mg; green, 20-50mg; white 15-40mg; matcha, 60-70mg.
what is tea processing, first you can pick it, then you can wilt it under the soon or let it dry indoors, you can bruise it by light crushing or tossing, you can fix it by steaming or baking, you can yellow it by sweltering (cooking it in a closed container), you can shape it by rolling or forming, you can dry it, you can cure it by fermenting it or even by smoking it. these are only some methods.
